Classic Indonesian Nasi Goreng
Ingredients
- 4 cups cooked jasmine rice, refrigerated overnight
- 3 tbsp neutral oil
- 3 shallots, thinly sliced
- 3 cloves garlic, minced
- 2 red chilies, sliced (adjust to taste)
- 1 tsp shrimp paste (terasi), toasted, optional
- 2 eggs
- 3 tbsp kecap manis (sweet soy sauce)
- 1 tbsp soy sauce
- 1 cup shredded cooked chicken or peeled shrimp
- Salt and white pepper to taste
- To serve: fried egg per person, sliced cucumber and tomato, prawn crackers (krupuk), fried shallots

Break up the cold rice with your fingers so there are no clumps.

Heat oil in a wok over high heat. Fry shallots, garlic, chilies, and shrimp paste for 1 to 2 minutes until fragrant.

Push the aromatics aside, crack in the 2 eggs, and scramble until just set.

Add the chicken or shrimp and stir-fry for 1 minute.

Add the rice and toss constantly for 3 to 4 minutes until every grain is coated and slightly crisp at the edges.

Pour in kecap manis and soy sauce. Toss until the rice is evenly dark and glossy. Season with salt and white pepper.

Plate and top each serving with a fried egg, cucumber, tomato, crackers, and a sprinkle of fried shallots.
