Moroccan Harira Soup

    In a large pot, melt butter over medium heat. Add onion, celery, and garlic. Cook until soft, about 8 minutes.

    Add all spices and stir 1 minute until fragrant.

    Add meat (if using) and stir to coat. Cook 3-4 minutes.

    Add crushed tomatoes, lentils, chickpeas, and water. Bring to a boil.

    Reduce heat and simmer 30-40 minutes until lentils are very soft.

    Mix flour with a little cold water to make a smooth slurry. Stir into the soup to thicken.

    Add cilantro, parsley, and lemon juice. Simmer 5 more minutes.

    Taste for salt. The soup should be rich, thick, and fragrant. Serve with crusty bread and dates — traditionally eaten to break the Ramadan fast.
