Peruvian Beef Stir-Fry (Lomo Saltado)
Ingredients
- 5 lbs beef sirloin, cut into strips
- 3 tbsp soy sauce
- 2 tbsp red wine vinegar
- 1 tsp cumin
- Salt and black pepper
- 3 tbsp vegetable oil
- 1 large red onion, cut into thick wedges
- 2 tomatoes, cut into wedges
- 1-2 aji amarillo peppers, seeded and sliced (or 1 jalapeno)
- 3 cloves garlic, minced
- 1 tbsp oyster sauce
- Fresh cilantro, chopped
- French fries (cooked separately) for serving
- Steamed white rice for serving
Instructions

Marinate beef strips in 1 tbsp soy sauce, cumin, salt, and pepper for 15 minutes.

Prepare French fries by your preferred method (deep-fried or oven-baked). Keep warm.

Heat a wok or large skillet over very high heat until smoking. Add oil.

Sear beef strips in a single layer without stirring for 1 minute. Stir-fry 1-2 more minutes until browned. Remove and set aside.

In the same pan, add onion wedges. Stir-fry on high heat 2 minutes until slightly charred at edges but still crunchy.

Add garlic and aji amarillo. Stir-fry 30 seconds.

Add tomato wedges, remaining soy sauce, vinegar, and oyster sauce. Toss together 1 minute — tomatoes should soften slightly but keep their shape.

Return beef to the pan. Add French fries and toss everything together quickly.

Top with fresh cilantro. Serve immediately with white rice.
