Classic Pad Thai with Shrimp
Ingredients
- 200g flat rice noodles (8mm)
- 250g medium shrimp, peeled
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp sugar
- 2 tbsp vegetable oil
- 2 eggs
- 2 garlic cloves, minced
- 2 shallots, sliced
- 3 scallions, cut into 1-inch pieces
- 1 cup bean sprouts
- Garnish: crushed peanuts, lime wedges, dried chili flakes, extra sugar and fish sauce on the side

Soak noodles in room-temperature water for 30 minutes. Drain.

Mix tamarind paste, fish sauce, and sugar in a bowl to make the sauce.

Heat oil in a wok over very high heat. Add garlic and shallots; stir-fry 30 seconds.

Add shrimp; cook until pink, about 2 minutes. Push to one side.

Add noodles and sauce. Toss everything together. If noodles stick, add 2–3 tbsp water.

Push noodles to one side; crack eggs into the empty space and scramble until just set. Fold into noodles.

Add bean sprouts and scallions; toss 30 seconds.

Serve topped with peanuts. Offer lime, chili flakes, sugar, and fish sauce on the side.
