Brazilian Cheese Bread (Pao de Queijo)
Ingredients
- 2 cups tapioca starch (also sold as polvilho doce or tapioca flour)
- 1/2 cup whole milk
- 1/4 cup water
- 1/4 cup neutral oil or melted butter
- 1 tsp salt
- 1 large egg
- 1 cup grated Parmesan (or a mix of Parmesan and mozzarella)

Preheat oven to 375F (190C). Lightly grease a mini muffin tin or line a baking sheet.

Combine milk, water, oil, and salt in a small saucepan. Heat over medium until it just comes to a boil.

Pour the hot liquid over the tapioca starch in a bowl. Stir vigorously to combine.

Let the dough cool for 10 minutes until warm but not hot.

Beat in the egg, then add the grated cheese. Mix until a soft, sticky dough forms.

Wet your hands and roll the dough into golf-ball sized balls (about 2 tablespoons each).

Place in the muffin tin or spaced apart on the baking sheet.

Bake 20-25 minutes until puffed and golden. Serve warm.
